“South and west of the town of Chablis, Montmains is a later ripening climat. Kimmeridgian soil is found in the Montmains sub-climat, but more clay than neighbouring vineyards of Butteaux and Les Forets – all three are used to produce Montmains. A whiff of honey and banana character, but subtle over the green apple, light herbal notes and seaspray-like mineral scents. Some depth in the flavour profile here, but not so much fruit flavour – almost sits low in the palate, but feels super pure, very defined by acidity and trimming chalky fringes. Almost glassy in texture. Finishes a little firm and metallic-tart. Delicious wine anyway.”
