Why we follow Billecart-Salmon

The estate

A family-owned house, a négociant with significant estate vineyards, founded in 1818 in Mareuil-sur-Aÿ and still run by the Billecart-Salmon family — one of the few grandes marques never sold. Mathieu Roland-Billecart is CEO, the seventh generation, with Florent Nys as chef de cave. Denis Blée and his predecessor François Domi shaped the modern style.

The vineyards

Around 100 hectares farmed or controlled across the Marne, supplemented by purchased fruit, with strong holdings in Mareuil-sur-Aÿ and the Côte des Blancs.

In the glass

The signature techniques are a long, cold double settling of the must and a cool, slow fermentation, which together give finesse and freshness. Stainless steel is used alongside increasing oak for the prestige cuvées, with low dosage on the top wines. The Brut Rosé is the insider's grande marque rosé, poured at top restaurants worldwide. Le Clos Saint-Hilaire, first made in 1995, is produced in tiny quantities.
