Why we follow Salon

The estate

The legendary single-village, single-variety, single-vintage house in Le Mesnil-sur-Oger, founded by Aimé Salon with its first commercial vintage in the early twentieth century. Owned by the Laurent-Perrier group, with Didier Depond as President since 1997. It makes only Cuvée S Le Mesnil Blanc de Blancs, and only in years judged great — roughly three or four times a decade, so only around 45 vintages have been released in its 120-year history.

The vineyards

One hundred per cent Chardonnay from Le Mesnil-sur-Oger, Grand Cru in the Côte des Blancs — the one-hectare walled Jardin de Salon plus parcels from a small group of select village growers. Pure chalk.

In the glass

No malolactic fermentation, which gives the house its racy acidity, and long ageing of around ten years on lees before release. Recent dosages sit near 5.5 to 6 grams per litre. Salon was the first house to specialise in Blanc de Blancs. The run of 2012, 2013, 2014 and 2015 is only the second sequence of four consecutive declared vintages in its history; the first was 1946 to 1949.
