About Cellared & Museum Burgundy (old manual)
Young Burgundy shows its fruit; mature Burgundy shows its place. With time in bottle, red Burgundy's tannins soften and the bright cherry and raspberry of youth give way to forest floor, spice, game and dried flowers. White Burgundy picks up hazelnut, honey and toast while keeping its line of acidity. Buying a bottle that has already been cellared saves you the decade of waiting.
The range leans towards the Cote de Nuits: Millot's Echezeaux, Grands-Echezeaux and Clos de Vougeot, Chambertin-Clos de Beze from Faiveley and Prieure Roch, Charmes-Chambertin from Humbert Freres, Mazis-Chambertin from Marchand and Burch, and Vosne-Romanee Les Suchots from Millot, Hudelot-Noellat and Confuron-Cotetidot. From the Cote de Beaune come Bouchard's Beaune Greves Vigne de l'Enfant Jesus and Jean-Marc Pillot's Chassagne-Montrachet Morgeot, and from Chablis, William Fevre's Premier Cru Beauroy. Most wines are held in small numbers, and some are available in magnum and larger formats.
With older wine, storage matters as much as the label. If you would like to know more about a particular bottle's provenance or condition before you buy, our team is happy to help.
To serve, stand the bottle upright for a day so any sediment settles, and open it an hour or so before dinner. Decant gently, and only if there is sediment, as older Burgundy can fade if it is aerated too hard. Serve reds slightly cool, around 15 to 16 degrees, and whites around 12 degrees.
For younger wines to cellar yourself, see Red Burgundy and White Burgundy, or browse by classification in Grand Cru Burgundy and Premier Cru Burgundy. Our wider Museum & Cellared Wines collection covers mature bottles from around the world.
