Why we follow Bollinger
The estate
A family-owned Aÿ grande marque, founded in 1829 and run by CEO Charles-Armand de Belenet. Denis Bunner became chef de cave in early 2023, succeeding the late Gilles Descôtes. Bollinger was the first house to obtain HVE certification, in 2012.
The vineyards
Around 178 hectares, of which some 104 are Pinot Noir, supplying roughly 70 per cent of the house's needs. Strong Grand and Premier Cru holdings in Aÿ, Verzenay and the Côte des Blancs, including the old ungrafted Vieilles Vignes Françaises parcels.
In the glass
Vintage wines are fermented in old oak barrels, reserve wines held in magnum under cork, and the wines are unfiltered. Since 2008 a slightly narrower bottle neck has slowed oxygen exchange. Bollinger was the first house, in 1952, to print a disgorgement date on the label — Madame Lily Bollinger's innovation, born of her habit of disgorging old bottles à la volée for dinner guests. It is also the Bond Champagne.
