Why we follow Dom Pérignon
The estate
The vintage-only prestige cuvée of Moët & Chandon, released only in years of exceptional quality, averaging around six vintages a decade. Vincent Chaperon is chef de cave, having taken over from Richard Geoffroy in 2018; he joined Dom Pérignon in 2005. His first fully solo vintage is the 2018.
The vineyards
A négociant-style assemblage drawn from a core of Grand Cru villages plus Hautvillers, always a blend of Chardonnay and Pinot Noir. The exact recipe is undisclosed.
In the glass
A minimum of eight to nine years on lees for the standard vintage, with dosage deliberately low, typically under six grams per litre and lower still for the Plénitudes. The Plénitude system releases the same vintage at successive maturity peaks: P2 after roughly twelve to fifteen years on lees, and P3 after twenty-five or more, rebranded from Œnothèque in 2014. Named for the Benedictine monk Dom Pierre Pérignon, cellarer at Hautvillers, who refined blending and pressing — he did not invent sparkling wine. Chaperon says every vintage must show the potential to age thirty years or more.
