“Picked on the first day of harvest, these three parcels sit on the sunny side. Moreover, they sit on steep slopes, allowing excellent sun exposure. Yet they also sit right in the Kimmeridgian clays, so they produce a wine that shows classic Chablis restraint. Scents of peach fuzz, lemon blossom, fleur de sel, sea shells and brie create a whirlwind of complexity. Didier loves how well this wine ages, so don't be impatient.”

“Sourced from a rather sunny, precocious site, the flamboyant 2023 Chablis Grand Cru Vaudésir opens with aromas of ripe citrus fruit, pear, peach and dried flowers. Full-bodied, the palate is giving yet precise, layered and underpinned by fine tension, with a fleshy core of fruit and a long, saline finish. One of the greatest domaines in Chablis. Founded by William Fèvre in 1957, its vineyard holdings include 16 hectares of Premier Cru and 15 hectares of Grand Cru vines. The Domaine has been committed to a strong environmental approach for more than twenty years. HEV3 certified since 2014, the majority of the vines are managed according to biodynamic principles. With a human commitment to the way the soil is treated and respect for biodiversity, Domaine William Fèvre does everything possible to express the most subtle variations in Chablis’ Climats.
