Spiritum 96 is Jean-Francois Clouet's attempt to hold two things in one glass: the freshness of a young rose and the depth of a great old vintage. The rose is drawn from Pinot Noir grown on the Clouet family's Grand Cru holdings in Bouzy, on the southern flank of the Montagne de Reims.
What sets it apart is the liqueur. Rather than a conventional dosage, Clouet built one from 1996 Bouzy Grand Cru wine and concentrated it at roughly 300 grams per litre, half the usual 600, so that a far greater proportion of the old vintage carries through into the finished Champagne.
