“50/50% pinot noir/chardonnay from the Granton vineyard, made in the traditionnelle méthode, 10 years on lees, dosage 5g/L, disgorged July '24. Light straw with a superfine bead and mousse. Aromas of crunchy green apple and pear, citrus and white peach with hints of fresh brioche, dried shiitake, clover blossom, flint, toast, almond paste, roast nuts and meal. It draws a long, stony mineral line on the palate, taut porcelain Tasmanian acidity kicking into overdrive, focusing those wonderful characters and sending them sailing across the palate with verve. Comes to a dry, savoury and very moreish end point.”

“Brine, strawberry, citrus and bread. Linear and long but with character. Some autolytic notes. Dry and textural through the finish. All wild ferment base wine. Super long and super good. Has power and length but this is where finesse and elegance intersect. Wonderful sparkling wine. Overview: Our 2013 Grande Vintage Brut, a 60/40 blend of Chardonnay and Pinot Noir. An epic wine with 11 years on lees, and disgorged in July 2024. The nose is reminiscent of lemon peel, honeysuckle, mineral and a hint of fresh honeycomb. There is a fine bead and delectable mousse. The palate is lithe with bright lemon, jazz apple and winter nelis pear with balanced acid. Hazelnut meal, honey nougat and marzipan back up the fresh first impression carrying into a long finish. Drinking beautifully now this wine can also benefit from further bottle ageing. Variety: 60% Chardonnay, 40% Pinot Noir Vineyard: 100% Estate grown, single vineyard, Derwent Valley”
